Bean Sauce

Ingredients:
  • 1 onion (chopped)
  • 1 can white beans
  • Water
  • Splash of oil
  • 2 heaped spoonfuls of tomato paste
  • 1 stock cube
  • Pinch of turmeric 
  • 1/2 tsp cumin
  • 1/2 tsp coriander
Method:
  1. Fry the diced onion in oil, until soft but not discoloured.
  2. Add water - just enough to cover the onion and let it simmer for a few minutes. 
  3. Add the tomato paste, cooking it for a while. Then add the stock cube, herbs and spices and salt. Then cover with water until your saucepan is half-full. Let simmer for 10 minutes.
  4. Add the beans and - again - simmer until the beans are soft enough and the sauce is done. 
  5. Serve and enjoy!
