Roasted Cauliflower

This recipe is from a book called 'Syria, recipes from the home'.
You will need:
  • 1 large whole cauliflower, chopped into florets
  • Vegetable oil, for roasting
  • Small handful of parsley, chopped
  • Handful of almonds, toasted
  • Salt & pepper, to taste
For the dressing:
  • 1 garlic clove
  • 1/4 tsp sea salt
  • 50 ml extra virgin olive oil
  • Juice of 1/2 lemon
  • 1/2  tsp ground cumin
Method:
  1. Roast the cauliflower florets with a little vegetable oil, salt and pepper for around 30 minutes or until they have turned golden brown.
  2. While the cauliflower is cooking, make the dressing by crushing the garlic and salt with a pestle and mortar, adding the olive oil, lemon juice and cumin, and whisk everything together.
  3. Pour the dressing on the roasted cauliflower and sprinkle with parsley and almonds to serve.
